Also called the sugarcane miller, the sugarcane millstone is the sugarcane squeezer in early Taiwan. It is made of two gear-shaped granite millstones and pulled by cattle. By inserting sugarcane in the middle, the cattle will pull the millstone to squeeze the juice from sugarcane to bottom container. After two to three rounds, all juice in the sugarcane will come out. At the bottom container of the millstone, there is a bamboo tubing connected to the cooking room where there is a tun for cooking sugarcane juice, with workers removing the scums on top. After the juice turns into syrup (sticky), limestone is added inside immediately for purification before pouring into the cooling container. During the cooling process, workers need to keep stirring the syrup with a wooden stirrer to ensure syrup evenness. After cooling, the crystal become the brown sugar. After packing in wooden boxes or bamboo baskets, the production process is completed.
